Fody’s Simple Sweet Potato Kale Chili
When you’re craving a bowl of hot chili this season, this Sweet Potato & Vegetable Kale Chili is a super flavorful and simple go-to! It’s brimming with creamy sweet potatoes, nourishing veggies, and hearty plant-based grounds.
Fody’s Simple Sweet Potato Kale Chili Ingredients:
- 2 tbsp Fody’s Shallot Infused Olive Oil
- 1 green bell pepper, diced
- 1 medium carrot, diced small
- 3 medium sweet potatoes, peeled and cut into 2 cm cubes
- 1 lb. plant-based ground ‘meat’ (low-fod map friendly)
- 2 tbsp Fody’s Taco Seasoning
- 1 tsp smoked paprika
- 2 cups water or Fody’s Vegetable Broth
- 1 jar Fody’s Medium Salsa
- 1 large kale leaf, de-stemmed and chopped
- ½ cup unsweetened plain plant-based yogurt or sour cream
- ¼ cup cilantro, chopped
Directions for Fody’s Simple Sweet Potato Kale Chili
- In a soup pot over medium heat, add shallot oil, bell peppers, carrots, and sweet potatoes. Stir and cover. Cook 5-6 min, stirring occasionally. Add in plant-based grounds, stir and cook 5-6 min, stirring occasionally.
- Add taco seasoning, and smoked paprika. Stir and cook another 1-2 min. Add broth and medium salsa. Stir to combine, then cook covered for 10 min, stirring occasionally. Remove lid and continue to simmer another 10-15 min, stirring occasionally until sweet potatoes are tender. Stir in kale and cook another 5 minutes. Serve topped with yogurt/sour cream and cilantro.
