Fody's Loaded Veggie Pasta with Mozzarella

Description of Fody's Loaded Veggie Pasta with Mozzarella

Cheesy veggie pasta...yes please! Get your veggies on with this gluten free vegetarian pasta dish! Gluten free penne pasta is tossed in Fody’s Spicy Marinara Sauce along with sauteed eggplant, zucchini and red bell peppers! It’s then topped off with gooey mozzarella balls & fresh basil for the ultimate Italian inspired dish! This will become a family favorite meal in no time!

Fody's Loaded Veggie Pasta with Mozzarella Ingredients:

  • 12 oz gluten free penne pasta (made with low FODMAP ingredients)
  • 2 cups Fody's Spicy Marinara Sauce
  • 1 Tbsp Fody's Garlic-Infused Olive Oil
  • 1 medium globe eggplant, cut into 1 inch pieces (about 1 cup)
  • 1 medium zucchini, diced (about ½ cup)
  • 1 cup red bell pepper, diced
  • ½ cup fresh mozzarella balls
  • Salt & black pepper, to taste

        Directions for Fody's Loaded Veggie Pasta with Mozzarella

        Boil the pasta according to the package’s directions, then drain it and set it aside.

        Next heat a ½ Tbsp of olive oil in a large pan over medium high heat. Once hot add your eggplant and sauté until just tender (about 4-5 minutes). Then transfer your cooked eggplant to a plate.

        Next heat another ½ Tbsp of olive oil in the same pan and add your zucchini and bell pepper. Sauté them until just tender (about 3 minutes) then add your marinara sauce and pasta and stir.

        Next add your cooked eggplant back in and stir until everything is fully coated in your sauce. Sprinkle your mozzarella balls over the top and wait for them to slightly melt then serve your gluten free vegetarian pasta dish immediately.
