Description of Fody's Low FODMAP BBQ Chicken Salad with Cilantro Lime Dressing

Baked low FODMAP BBQ chicken tenders, chopped lettuce, juicy tomatoes, crisp bell peppers & sweet corn are all tossed in a tangy cilantro lime dressing! This salad is a twist on traditional BBQ chicken salad that’s so easy to make! It’s loaded with fresh ingredients & the perfect blend of sweet & savory!

Fody's Low FODMAP BBQ Chicken Salad with Cilantro Lime Dressing Ingredients:

  • 1 lb. raw chicken breast tenders
  • ½ cup Fody's Original BBQ Sauce
  • 1 Tbsp Fody's Shallot Olive Oil
  • 4 cups lettuce, chopped
  • 1 pint cherry tomatoes, roughly chopped (about 10 tomatoes)
  • ¼ cup canned corn, drained
  • 1 cup red bell pepper, diced
  • ¼ cup plain Greek yogurt
  • 2 Tbsp lime juice
  • 2 Tbsp cilantro
  • ¼ tsp salt
  • Black pepper, to taste

        Directions for Fody's Low FODMAP BBQ Chicken Salad with Cilantro Lime Dressing

        Place your dressing ingredients in a food processor and blend until smooth. Then store it in the refrigerator while you prepare the rest of your salad.

        Next preheat your oven to 375 degrees and spray a baking dish with nonstick cooking spray.

        Place your chicken tenders in the dish and brush them with your olive oil. Then season them with salt and pepper. Place the pan in the oven and bake for 15 minutes.

        Once the chicken is done, chop them into 1 inch pieces and toss them in your BBQ sauce. Place them in the refrigerator to cool.

        When you’re ready to serve, place your lettuce in a bowl and layer it with your tomatoes, corn, bell pepper and cooled low FODMAP BBQ chicken. Then pour your desired amount of dressing over the top and toss until the salad is fully coated. Serve your low FODMAP BBQ chicken salad immediately.
