Description of Fody's Chipotle Shrimp Salad with Low FODMAP Dressing

Grilled shrimp smothered in Fody’s Chipotle BBQ sauce is the perfect way to spice up your salad game! Packed with nutrient-dense greens + veggies (like avocado and fire roasted corn) with a Mexican-inspired twist, you won’t believe this salad is Low FODMAP. Tossed with Fody’s Garden Herb dressing it’s the easy, refreshing, and gut-friendly meal you didn’t know you needed!

Fody's Chipotle Shrimp Salad with Low FODMAP Dressing Ingredients:

  • 2 lbs jumbo shrimp, raw/peeled/deveined
  • 6 cups butter lettuce, chopped
  • 1 cup kale, chopped
  • 1 cup spinach, chopped
  • ¾ cup canned fire roasted corn/grilled corn off the cob
  • 2 cups whole cherry tomatoes
  • 1 - 1 ½ cups Fody's Chipotle BBQ sauce
  • ¼ of an avocado, diced
  • ½ cup fresh cilantro, chopped
  • Lime wedges
  • ½ cup Fody's Garden Herb Dressing

        Directions for Fody's Chipotle Shrimp Salad with Low FODMAP Dressing

        In a large bowl, add raw, cleaned shrimp + Fody Chipotle BBQ sauce, tossing to evenly coat. Leave the shrimp to marinate in the fridge while you chop your greens + herbs.

         

        Once your salad ingredients are prepped, remove the shrimp from the fridge and thread onto BBQ skewers or kebab sticks, preparing to grill.

         

        Place the shrimp skewers on the grill or a grill pan on the stovetop over medium-high heat + grill 2-3 minutes on each side or until shrimp are pink + opaque.

         

        While shrimp cooks, toss salad greens, tomatoes, corn + avocado with garden herb dressing in a large mixing bowl to evenly coat.

         

        Divide into 6 bowls, topping with grilled chipotle shrimp, fresh cilantro + a squeeze of fresh lime. Drizzle on more garden herb dressing as desired + serve immediately.
