Fody's BBQ Buddha Bowl With Sweet Potato Ingredients:

  • ⅔ cup sweet potato, cubed
  • 1 whole red pepper, diced
  • ¼ cup shredded kale
  • ¾ cup shredded red cabbage
  • 2 tbsp fresh cilantro, chopped
  • 1 cup steamed white rice
  • ¼ cup Fody’s Original BBQ Sauce
  • 1 tbsp Fody’s Everyday Seasoning
  • 2 tbsp shredded cheddar cheese (optional)
  • 1 tbsp olive oil for cooking

        Directions for Fody's BBQ Buddha Bowl With Sweet Potato

        Cook rice according to package instructions.

         

         

        While rice cooks, add 1 tbsp olive oil to a pan over medium heat + heat until oil is shimmering. Once oil is hot, add cubed sweet potatoes, cooking about 10 minutes, then add diced red peppers to the pan.

         

         

        Cook until a fork can pierce the potato but still firm, another 10-15 minutes, then add shredded kale + cabbage, lightly sauteeing until all veggies are soft, another 3-5 minutes.

         

         

        Next, add in Fody’s BBQ Sauce and Everyday seasoning, stirring again to fully incorporate sauce + seasoning. Remove from heat once all veggies are coated.

         

         

        Add rice to bowls + top with sauteed veggies, cilantro + cheddar cheese and enjoy.
