Fody's BBQ Chicken Cobb Salad

Description of Fody's BBQ Chicken Cobb Salad

A fun twist on traditional cobb salad! This hearty cobb salad is loaded with tender bbq chicken, canned corn, hardboiled eggs, tomatoes, bacon and avocado and tossed in Fody’s Garden & Herb Dressing! BBQ chicken salad is always a great option for a low FODMAP lunch or dinner and the perfect meal to transition into spring!

Fody's BBQ Chicken Cobb Salad Ingredients:

  • 1 lbs raw chicken breast tenders
  • ½ cup Fody’s Original BBQ Sauce
  • 4 cups of lettuce, chopped
  • 4 hardboiled eggs, peeled & chopped (1 per person)
  • 8 strips of bacon, cooked & crumbled
  • 1 pint cherry tomatoes, halved (about 10 tomatoes)
  • ¼ cup canned corn, drained
  • ½ of a small avocado, diced
  • ½ cup Fody’s Garden & Herb Salad Dressing

        Directions for Fody's BBQ Chicken Cobb Salad 

        Preheat your oven to 375 degrees and spray a baking dish with cooking spray.

        Next season your chicken tenders with salt and pepper and place them in the dish. Generously brush both sides of your tenders with your Fody’s Original BBQ Sauce and bake for 15-17 minutes. Once done, let your chicken tenders cool completely before cutting them into pieces. (You can place them in the refrigerator to cool faster.)

        When you’re ready to serve, place your lettuce in a bowl and layer it with your eggs, bacon, tomatoes, corn and avocado. Pour your desired amount of Fody’s Garden & Herb Dressing over the top and toss until the salad is fully coated.

        Top the salad with your cooled chicken pieces and serve your bbq chicken cobb salad immediately.
