This copycat Cheesy Gordita Crunch recipe is quickly going to become your go-to for taco night. Crispy taco shells wrapped in corn tortillas with gooey cheddar cheese + stuffed with ground beef + Low FODMAP vegetables make for a gut-friendly alternative to the fast food original. Featuring Fody Taco Seasoning, Taco Sauce, Mild Salsa, and Garden Herb dressing, it's just bursting with zesty Tex Mex flavors and is bound to please the whole family!
Pre-heat oven to 375F.
In a large skillet over medium high heat, drizzle Fody Olive Oil + heat till simmering. Add in ground beef and Fody Taco Seasoning, breaking up ground beef with a spatula.
Allow ground beef to brown approximately 7 minutes, then add Fody Taco Sauce, continuing to break up beef as it browns.
While beef finishes, grease a lined baking sheet and arrange soft corn tortillas on it.
Sprinkle shredded cheddar cheese evenly onto each tortilla, then sprinkle additional Fody Taco seasoning on top of cheese. (Remember to stick with 2 oz or less of a low lactose cheese, if following the Low FODMAP diet).
Bake for 3-4 minutes until the cheese is beginning to melt. Remove tray from oven + add hard taco shells by placing one side down onto the melted cheese. Bake an additional 2 minutes, then press the cheese side on to the hard shell tortilla and bake an additional 2 minutes to set.
Before assembling tacos, in a small mixing bowl, mix up Fody Garden Herb dressing and sour cream/greek yogurt for your cheesy gordita crunch sauce recipe.
Once shells are set, divide ground beef up into each taco shell + top with shredded lettuce, Fody Mild Salsa and sour cream Garden Herb dressing.
