- 1 lb. raw shrimp, peeled and de-veined
- 1 tbsp Fody’s Taco Seasoning, divided
- ½ cup corn
- ½ cup cherry tomatoes, halved
- 3 cups cooked white or brown rice
- ½ cup roasted red peppers, chopped
- 1 tsp cumin
- ½ tsp smoked paprika
- ¼ cup Fody’s Enchilada Sauce
- 1 tbsp lime juice plus lime wedges for serving
- ¼ cup cilantro, finely chopped
- ½ avocado, sliced
- ⅓ cup Fody’s Salsa Verde
- ½ cup sour cream
Directions for Fody’s Skillet Shrimp & Rice with Avocado
- To start your low-FODMAP shrimp dish, add 1 teaspoon of Fody’s gut-friendly shallot-infused olive oil and the shrimp to a large bowl. Add 2 teaspoons of Fody’s gut-friendly taco seasoning, and toss well to coat. Heat a large skillet on medium heat. Add 1 tablespoon of shallot-infused oil. Once the pan is hot, add the shrimp in a single layer. Cook for 2-4 minutes on each side, then transfer the shrimp to a plate, leaving any liquid in the pan.
- Add the remaining 1 tablespoon of low-FODMAP shallot-infused olive oil, corn and tomatoes to the pan, stir, and cook for 2-3 minutes. Add rice, peppers, cumin, smoked paprika, enchilada sauce, and lime juice. Stir well to incorporate, and cook for 2-3 minutes, until rice is warmed. Top with the shrimp. Warm further if needed, to warm up the shrimp. Top your low-FODMAP skillet shrimp with extra lime juice, lime wedges, cilantro, avocado, salsa verde and sour cream.
