Description of Fody's No Bake Pumpkin Cheesecake Mousse

Pumpkin cheesecake gets taken up a notch with this light and airy dessert! Buttery cookie crumbles for the crust, spiced velvety smooth mousse in the middle and a dollop of sweet whipped cream on top! This low FODMAP dessert is the perfect sweet treat for the holidays!

Fody's No Bake Pumpkin Cheesecake Mousse Ingredients:

  • 1 cup whipped cream
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 8 oz. lactose free cheese cream cheese (from Green Valley Creamery)
  • 6 Tbsp maple syrup
  • ½ tsp vanilla
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground cloves
  • 1 cup Pamela’s Pecan Shortbread Cookies, crushed
  • 3 Tbsp butter

        Directions for Fody's No Bake Pumpkin Cheesecake Mousse

        Mix your crushed cookies and melted butter together in a bowl then set it aside.

        Next beat your cream cheese, pumpkin puree, maple syrup, cinnamon, nutmeg, cloves and vanilla together in a large bowl until smooth and fluffy.

        Then reserve a ½ cup of your whipped cream and fold the rest into your pumpkin mixture with a spatula.

        To assemble, press some of your cookie mixture into the bottom of a glass and scoop your pumpkin mousse on top. Top it off with a scoop of your reserved whipped cream or fill a plastic bag with the whipped cream and pipe it over the top. Sprinkle with cinnamon or nutmeg and serve.
