Fody's Easy Seasoned Shredded Chicken Quesadillas

Description of Fody's Easy Seasoned Shredded Chicken Quesadillas

Easy, cheesy and incredibly flavorful, these healthy chicken quesadillas are sure to rock your world! Almond flour tortillas are stuffed with seasoned shredded chicken (using Fody’s Taco Seasoning), lots of veggies and 2 types of cheeses then cooked until crispy and gooey! Serve these quesadillas with Fody’s Medium Salsa for an easy bloat-free lunch or dinner option that’s healthy and delicious!

Fody's Easy Shredded Chicken Quesadillas Ingredients:

  • 1 lbs raw chicken tenders
  • 1 Tbsp Fody’s Shallot Infused Olive Oil
  • 1 Tbsp Fody’s Taco Seasoning
  • ½ cup red bell pepper, chopped
  • ½ cup green bell pepper, chopped
  • 2 Tbsp cilantro, chopped
  • 6 oz. cheddar cheese, shredded
  • 6 oz. Monterrey Jack cheese, shredded
  • 4 almond flour tortillas (made with gut-friendly ingredients)
  • ½ avocado, sliced (⅛ per quesadilla)
  • 1 cup Fody's Medium Salsa

        Directions for Fody's Easy Shredded Chicken Quesadillas

        Preheat your oven to 375 degrees and spray a large baking dish with cooking spray.

        Next place your chicken tenders and red and green bell peppers in a large bowl and toss them in your Fody’s Shallot Infused Olive Oil and Fody’s Taco Seasoning. Then pour the mixture in your prepared dish and spread them out so they’re not over lapping. Place the dish in the oven and bake for 15-18 minutes. Once done, use a fork and knife to shred the seasoned chicken and mix it with your cooked bell peppers. Set it aside once done.

        Next heat a large pan over medium-high heat, spray it with cooking spray and place one tortilla in the center of the pan. Working quickly, sprinkle half the tortilla with your cheddar and Monterrey jack cheeses then layer the same side with your seasoned shredded chicken mixture, cilantro and a little more cheese sprinkled on top. Then fold the other half of your tortilla over the filling and cook on both sides until crispy and the cheese has melted. (About 2-3 minutes per side.)

        Then remove your healthy quesadilla from the pan and repeat with your remaining tortillas and ingredients.

        Serve the healthy quesadillas immediately with your sliced avocado and Fody’s Medium Salsa.
