Fody’s Rotisserie Chicken & Avocado Wraps
For a quick and easy lunch or light dinner that is satisfying and full of flavor, these Rotisserie Chicken & Avocado Wraps really hit the spot! These are super simple, made with rotisserie chicken to save on time, along with creamy avocado and goat cheese, tangy roasted red peppers, and vibrant salsa verde.
Ingredients for Fody’s Rotisserie Chicken & Avocado Wraps
- 1 tbsp Fody’s Shallot Infused Olive Oil
- 3 cups rotisserie chicken broken up into medium to large shreds
- 1 to 1 ½ Fody’s Taco Seasoning, to taste
- 4 gluten-free tortillas / wraps
- ¾ cup goat cheese
- 1 avocado, sliced
- 1 ½ cups jarred roasted red peppers, drained well and pat dry with kitchen towel
- ½ cup Fody’s Salsa Verde
Directions for Fody’s Rotisserie Chicken & Avocado Wraps
- Heat a large skillet on medium heat. Add shallot oil and chicken, toss, and sprinkle with taco seasoning. Stir to incorporate, and cook 1-2 min until heated through.
- On each wrap, gently spread goat cheese across with a spoon. Top with chicken and divide the avocado and red peppers among the wraps. Top with salsa verde as desired. For each wrap, serve folded over (taco-like). Or, fold in both sides, fold up the bottom, then roll upwards until wrap is complete. Cut in half if desired.
