  • 1 pound (455 g) salmon filet, skin removed, at room temperature
  • 1/2 cup (120 ml) FODY Maple Dijon Salad Dressing, divided
  • 8 ounces (225 g) baby gold potatoes, scrubbed and halved
  • 6 ounces (170 g) slender green beans, trimmed


FODY Maple Dijon Salad Dressing is not just for green salads! Here we drizzled salmon with the dressing before roasting and then used the dressing again to bring together the cooked fish, potatoes and green beans. The two vegetables can be cooked together, which saves time and clean up while the salmon is roasting. Read the recipe through so you are familiar with the steps. Preheat oven to 375°F/190°C. Place salmon in roasting pan or ovenproof skillet. Drizzle with 1/4 cup (60 ml) of the FODY Maple Dijon Salad Dressing. Roast for 10 minutes and check for doneness. It should just be opaque and just losing its translucency. Continue roasting another 5 minutes, if needed.

Meanwhile place potatoes in medium sized pot and cover with water by 1 inch (2.5 cm). Bring to a boil, adjust heat, and simmer for about 12 minutes. Pierce with a knife to check tenderness. About 2 minutes before they are done, add the beans. Both veggies will be ready at the same time; the potatoes will be cooked through and the beans will be crisp and bright green. Drain potatoes and green beans well.

Plate the salmon with some potatoes and green beans and drizzle with the remaining 1/4 cup (60 ml) of the dressing, divided evenly amongst servings. Serve immediately.
